Cake Covered in Marzipan

This cake was covered in marzipan rather than fondant. Marzipan is an almond-sugar paste with great flavor. It can be shaped like fondant and gumpaste, but not as delicately. I use Odense marzipan from Denmark. It is delicious but also expensive. For those who prefer no buttercream, marzipan can cover a cake that has been iced with fruit preserves in place of buttercream. Fondant is typically laid over buttercream, but also can be laid over marzipan. This particular cake had marzipan, in its natural color, over buttercream.
